With proper labeling of foods so important to protecting your customers’ health, a solid food rotation system must be in place.  A key component to any rotation system is the FIFO principle.  FIFO stands for “first in, first out”.  According to the FDA Model Food Code, the date marked on the container or food item should be the use by or discard date.

So how does this system work?  Use day-of-the-week labels to indicate use by dates.  For example, if today is Monday and you are labeling an item with a 3-day shelf life, a Wednesday label is applied to the item to indicate that the product should be used by the end of the day on Wednesday.
